Brown Sugar Muffins

1 cup butter
2 cups brown sugar
2 eggs
4 cups flour
2 tsp baking soda
1 tsp salt
2 tsp vanilla
2 cups milk

Combine and bake at 375 for 15 minutes.  Makes about 2 dozen.

sugar cookie bars

 

makes 3-4 dozen bars

ingredients

for the cookies:
1 cup (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
for the frosting:
1 cup (2 sticks) unsalted butter, at room temperature
1 teaspoon vanilla extract
pinch of salt
4 cups confectioner’s/powdered sugar, sifted
5 tablespoons milk
food coloring, if desired
sprinkles, if desired

directions

preheat the oven to 375 degrees. grease a 13” x 18” rimmed baking sheet + set aside.
in a stand mixer, or in a large bowl with an electric mixer, cream butter + sugar on a medium-high speed until light + fluffy. add eggs, one at a time, beating well after each addition + scraping down the sides of the bowl as needed. add in vanilla extract + mix well.
in a separate bowl, whisk together the flour, salt, + baking soda. slowly add to butter mixture + mix on a low speed just until combined.
transfer the cookie dough to the prepare rimmed baking sheet + press into an even layer.
bake for 15-20 minutes, until light golden brown + a toothpick inserted into the center comes out clean. allow to cool completely on a wire rack before frosting.
to prepare frosting: in a large bowl or a stand mixer, beat butter on a medium-high speed until light + fluffy. add in the vanilla + salt. add the powdered sugar 1 cup at a time until combined, then add milk + mix until smooth. tint with a few drops of food color, if desired. spread over the cooled cookie in the baking sheet, decorate with sprinkles if desired, then cut into bars.

Kabob Marinade

1 cup vegetable oil

In a large resealable plastic bag, combine the oil, soy sauce, lemon juice, Worcestershire sauce, mustard, ground black pepper and garlic.   Mix well, and add your favorite meat. Seal the bag, and marinate in the refrigerator for 4 to 24 hours.

Snickerdoodle Cupcakes

 

1 package plain white cake mix or yellow cake mix
3 large eggs
1 cup milk
1/2 cup butter, melted
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
Preheat oven to 350 degrees. Place cupcake liners in pan (I always set out 24 regular sized, sometime I get 24 sometimes less. I have often found it depends on the cake mix). Mix together cake mix, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl for three minutes. Scrape bowl half way through. Pour batter into muffin pans. Bake 15-20 minutes. Check at 15 minutes. Do not overbake. Allow the cakes to cool completely.

Snickerdoodle Frosting Recipe

1/2 cup softened salted butter
1 teaspoon vanilla extract
2 teaspoons cinnamon
pinch of salt
3 3/4 cups powder sugar
1/4 cup brown sugar
add milk 2 tablespoons at a time until you reach the consistency you desire

Sunshine Lemon Bars

Crust  Ingredients:
2cups flour
1/2 cup powered sugar
1 cup soft butter

Fillling Ingredients:
4 eggs
2 cups white sugar
1/4 cup flour
1 tsp baking powder
1/4 cup lemon juice

Preheat oven to 350.
Crust:  In medium bowl, stir together the flour and sugar. Cut in buttr untilmixture is crumb like.  Press into bottom of 9X13 pan.  Bake at 350 for 20-25mins, until crust is golden brown.
While the crust is baking, make the filling.  In the same bowl, beat the eggs, sugar, flour, and baking powder with mixer until light aout 3mins.  Then sitr in the lemon juice.  Pour filling over the crust and bake for an additional 25-30 mins until top is slightly browned  Remove from oven and cool.  Dust with powered sugar.  Cut into squares and enjoy.

Taco Soup

1 pound hamburger
1c chopped onion
1 16 oz corn
1 16oz kidney bean
1 16oz tomatoes
1 8oz ca tomato sauce
1 pkg tco seasoning
 
Cook hamburger and onion till done, drain off grease.  Add the rest of ingredients. May simmer as long as you want.  Can serve with tortilla chips and grated cheese.

Chicken Encilladas

2 cups cooked diced chicken
8 oz sour cream
2 cans cream of chicken soup
1 4 oz can green chilis
2T minced onion
2c grated cheese
1 dozen tortillas

Mix all ingredients.  Spread spoonful of mixture on bootom of 9X13 pan.  Put a large spoon into each tortilla and roll, put into pan.  Spread remaining mixture on top, then sprinkle grated cheese on next.
bake at 350 for 30 mins.

Sour Cream Hamburger Enchiladas

1# cooked hamburger
8oz sour cream
2 cans cream of mushroom soup
1 4oz can green chilies
2 T. minced onions
2 cups grated cheese
1 dozen flour tortillas

Mix all ingredients except cheese. Put alittle mixture in bottom of 9x13 pan.  Spread large spoonful of mixture in each torilla.  Roll and put in pan, repeat until done.  Spread remaining mixture over top of torillas and sprinkle cheese.  Bake at 350 for 30mins.

Best Ever Chocolate Cake

2c sugar
2c flour
½ tsp salt
1c butter
1c water
3 tbsp cocoa
1/2c sour cream
2 eggs
1 tsp soda

In a bowl combined sugar, flour, and salt.

In small sauce pan bring butter water and cocoa to a boil mix well, and liquid ingredients to the dry mix well add sour cream eggs and soda blend well grease pan do not over bake

Frosting

1/4c melted butter

Add 1/2c cocoa, mix well add the 2c powder sugar, cream cheese 4 oz and the vanilla. Some time I have to add more powder sugar to make it thick enough, frost when cake is almost cool

Brownies

4 cups flour
1 tsp. salt
2 tsp. baking powder
3 cubes melted butter
10 Tbsp. cocoa
8 eggs
4 cups sugar
2 ts[Vanilla

Mix well. Add dry ingredients and mix well then put in a sprayed cookie sheet. Bake 350 for 25 minutes or until fork comes out clean

Pink Lemonade Dessert

5 cups crushed gram crackers (4 packages)
6 Tbsp. sugar
¾ cup melted butter (you might need alittle more)

Put ¾ of the crust on bottom of the cookie sheet and put in the freezer for 5-10 minutes. Mix one gallon vanilla ice-cream softened. 12 ounce pink lemonade thawed. Spread on crust and sprinkle with remaining gram crackers on top. Freeze 4 hours before serving.

Double Chocolate Waffles

2/3 cup flour
1/3 cup cornstarch
1/4 cup unsweetened cocoa powder 
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon cinnamon
1 cup milk
1/3 cup vegetable oil 
1 1/2 teaspoons vanilla
1 egg
 1/2 cup mini chocolate chips

2.  Preheat waffle iron.
3.  Whisk together flour, cornstarch, cocoa powder, baking powder, baking soda, salt, and cinnamon.
4.  In a separate bowl, whisk together sugar, milk, oil, egg, and vanilla for about 1 minute or until it gets a little frothy.
5.  Slowly add the wet ingredients into the dry ingredients a little at a time, whisking until just combined; be careful not to over mix.  Stir in the chocolate chips.  This is a pretty thin batter, so don't be expecting pancake batter.
6.  You shouldn't have to grease your waffle iron.  Ladle batter into waffle iron, being careful not to overfill.  Bake according to the instructions for your waffle iron.

TIPS:  Instead of pouring batter, use a ladle and spoon it onto the waffle iron, making sure to stir the batter each time so the chocolate chips will be evenly distributed.  Also, leftover waffles can be frozen and heated in a toaster, toaster oven, or microwave for a quick breakfast.

Makes 3-4 whole waffles or 12-16 quarters

GRANDMAS HOMEMADE RASPBERRY TOPPING

Ingredients:
2 Cups Frozen Raspberry's
1 ½ Cups Sugar
2 Cups Water
3 Tablespoons Cornstarch
½ Cup Cold Water
1 Tablespoon Lemon Juice

Method:
In a medium sized sauce pan, place frozen raspberries, sugar and 2 cups water; bring to a boil.
Add ½ cup cold water to cornstarch and stir until cornstarch is dissolved. Add cornstarch to boiling raspberry mixture to thicken, stirring continually.
Remove thickened raspberry mixture from heat and stir in lemon juice.
Return raspberry topping to medium heat for 1 minute while continuing to stir, remove homemade raspberry topping from heat.  Had this over the chocolate waffles.  Yummy!
