Double Chocolate Waffles

2/3 cup flour
1/3 cup cornstarch
1/4 cup unsweetened cocoa powder 
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon cinnamon
1 cup milk
1/3 cup vegetable oil 
1 1/2 teaspoons vanilla
1 egg
 1/2 cup mini chocolate chips

2.  Preheat waffle iron.
3.  Whisk together flour, cornstarch, cocoa powder, baking powder, baking soda, salt, and cinnamon.
4.  In a separate bowl, whisk together sugar, milk, oil, egg, and vanilla for about 1 minute or until it gets a little frothy.
5.  Slowly add the wet ingredients into the dry ingredients a little at a time, whisking until just combined; be careful not to over mix.  Stir in the chocolate chips.  This is a pretty thin batter, so don't be expecting pancake batter.
6.  You shouldn't have to grease your waffle iron.  Ladle batter into waffle iron, being careful not to overfill.  Bake according to the instructions for your waffle iron.

TIPS:  Instead of pouring batter, use a ladle and spoon it onto the waffle iron, making sure to stir the batter each time so the chocolate chips will be evenly distributed.  Also, leftover waffles can be frozen and heated in a toaster, toaster oven, or microwave for a quick breakfast.

Makes 3-4 whole waffles or 12-16 quarters
