Grape Salad

4# grapes ( I mix green and red)
1 16 oz sour cream
2 cream cheese softened
1 cup sugar
2tsp. vanila
brown sugar

Mix sour cream, cream cheese, sugar and vanilla.  Mix well!  Mix in grapes sprinkle brown sugar on top.

Peanut Butter Bars

1 cake mix- yellow,white or chocolate.
2 eggs
1/3 cup oil
1/2 cup peanut butter
1 cup chocolate chips

Mix together the cake mix (dry), eggs, and oil.  Add peanut butter. Mix and add chocolate chips. Pat down in a 9X13 pan. cook at 350 for 12-18mins.

Fruit Pizza

Ingredients
  • 4 cups all-purpose flour
  • 1 cup butter
  • 1/4 cup white sugar
  • 1 3/8 cups cream cheese, softened
  • 3/4 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1 (12 ounce) container frozen whipped topping, thawed
  •                     

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12 inch pizza pan.
  2. To Make Crust: In a large bowl, mix together flour, butter and sugar; dough should be dry. Spread into pizza pan. Bake in preheated oven for 10 minutes, or until brown. Allow to cool completely.
  3. To Make Filling: In a large bowl, beat cream cheese, sugar and vanilla until fluffy. Fold in whipped topping. Spread into cooled crust. Top with fruit.

Funnel Cakes


Directions:

  1. 1Beat eggs and sugar together and then add the milk slowly--beat. Add the dry ingredients and beat until smooth and creamy.
  2. Pour batter into a funnel and at the same time, use your finger to plug the hole. In a large  pot, add 2 inches of oil to the bottom.
  3. When the oil becomes hot, move your hand over the pot and slowly release your finger so the batter can start cooking.
  4. Move the funnel around to make designs.
  5. Brown on both sides--then immediately remove and drain extremely well.
  6. Top with honey, or cinnamon sugar, or powdered sugar as a topping.
     

German Pancakes


Ingredients

  • 6 eggs
  • 1 cup 2% milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  •  

Directions

  • In a blender, combine the eggs, milk, flour and salt; cover and process until smooth.
  • Pour the butter into an ungreased 13-in. x 9-in. baking dish; add the batter. Bake, uncovered, at 400° for 20 minutes.
Serve with syrup  and powered sugar.

Banana Bread

3-4 ripe bananas
1 cup oil
2c. sugar
3tsp vanilla
3 eggs well beaten
3 cups flour
1/4 tsp baking powder
1 tsp salt
1 tsp soda
1 tsp nutmeg
3 tp cinnamon

Mix together the first 5 ingredients.  Sift together dry ingredients.  Mix all together.  Pour in loaf pans and bake at 325 for 1 hour.  Makes 2 loaves

Ramen Noodle Stir-Fry

1 cup brocolli and carrots fresh and cut
1 pkg ramen noodles chicken or beef
1 cup water
1/2 ground beef or 1 large chicken breast

Cook beef or chicken till well done.
Add vegetables and saute till tender
Add ramen noodles and water
Cook the noodles till tender and water is absorbed
serve with soy sauce if desried

Megan learned how to cook this at school.  It is an easy fast meal she can make.

Lasagna

1 pound Hambuger
2 cans Hunts Spaghetti Sauce
1 Package Lasagna Noodles
Dry Minced Onion to taste
1 cup sour cream
Minced Garlic
Cheese 1 pound

Brown hamburger, onions and garlic.  Add spagetti sauce and sour cream.  Use 9 X 13 pan.  Put a little sauce in bottom of pan, then layer of noodles, sauce mixture and cheese.  Then, repeat with noodles, meat mxture and cheese.

Bake at 350 covered for 1 hour.   I use dry lasanga noodles.

Stuffed Mushrooms

2 pakages mushrooms
1 chives and onions cream cheese spread
parmesan cheese
cooked bacon

Wash and pull out mushroom stems.  Fill with cream cheese spread.  Add parmesan to top then piece of bacon.  Cook on 350 for 20mins.

Strognaff

1# Hamburger
2 10 3/4 oz cans Cream of Mushroom Soup
2 cans of water
1 cup Sour Cream
Beef flavoring (Bullion or my favorite bread store gravy dry mix)
Corn starch to thicken
Pepper to taste


Fry hamburger, drain add soup, water, sour cream and beef flavoring.  Bring to a boil add thickening and pepper.  Serve over rice or noodles.

Crockpot Italian Chicken



8 chicken breasts
2 packet dry Zesty Italian dressing (Regular is fine but I like zesty better. 
2 (8 oz) package cream cheese, softened
2- cans cream of chicken soup
Place the chicken in a crockpot and sprinkle Italian dressing over it. Combine cream cheese and cream of chicken soup in a small bowl  and pour over chicken. Cook on low in the crockpot for at least 4 hours. You can leave it in there all day. Once chicken is done you can leave the chicken breasts whole, cube it, or even shred it. I always cut the breasts into tenderloin size strips. Once you have cut up the chicken, throw it back in the crockpot and stir into the sauce.
If you feel the sauce is too thick you can thin it to your preferred consistency with a little milk. Serve over pasta or rice. Also, if I don't have enough time I put it in the oven.

Strawberry Jello Salad


3-1/2 c. boiling water
1 lg. package strawberry jello
1 sm. pkg. instant vanilla pudding
8 oz. cool whip
1 pkg. frozen strawberries or fresh

Bring water to boil. Add jello and pudding. Stir until dissolved. Cool until set solid. Add cool whip and drained ,thawed strawberries. Stir well and serve.

Peanut Butter Clusters

2c. sugar
1/2 c. milk
1/2 c. butter
1 tsp. vanilla
1 c. creamy peanut butter
3 c. rolled oats

Combine sugar, milk and butter. Bring to a full boil. Boil 1 minute. Remove from heat. Add vanilla and peanut butter and stir until smooth. Add oats, mix well.
Cool slightly and drop on waxed paper. Let cool. Or spread in a 9x13 pan. Cool and cut apart

Grown up Green Salad

1 head iceberg lettuce
1 package spring salad mix
1/2 cup bacon bits or diced cooked bacon
Mix above together and pour dressing over mixture right before serving
Dressing:
1 pkg mushrooms sliced
1/4 cup diced purple onion
1 cup vegetable oil
1/2 cup vinegar
1/2 cup sugar
2 TBSP yellow prepared mustard
4TBSP poppy seeds (can leave out and is yummy also)

Peanut Butter Brownies


2-pkgs brownie mix
1 cup peanut butter
Mix brownies according to the directions on the box. Pour into greased sheet cake. Heat peanut butter in microwave until melted.(@45 seconds) drizzle over brownies and swirl. Bake according to directions on box. My family loves these brownies, they are their favorite.

Peanut Butter krispies

  1 c. Karo syrup
1 c. sugar
1 c. peanut butter
6 c. rice krispies
1/2 c. choc. chips
1/2 c. butterscotch chips

Mix syrup, sugar, & peanut butter in a sauce pan. Cook until sugar is melted & it just starts to boil and take off the unit. I put the rice krispies into the sauce pan and mixed them up. I added more rice krispies if it looked like there was more needed. Put them into a buttered 9x13 pan. You can add melted choc. chips and butterscotch chips over top and let it chill in the fridge or freezer to harden up the chocolate.

CAFE RIO LOVERS



Creamy Cilantro Dressing
1 buttermilk ranch dry dressing pkg.prepared according to directions
2 tomatillos
1/2 bunch cilantro
1 clove garlic
juice of 1 lime
1 jalapeno(its pretty spicy with no seeds at all, but add some if you want extra hot)
Blend all together in food processor or blender, store in fridge

Cafe Rio Rice
3c water
4 tsp bullion
4 tsp minced garlic
1/2 bunch cilantro
1 can green chilis
3/4 tsp salt
1 TB butter
1/2 onion
3c. rice
Blend cilantro, chilis, and onion in processor or blender. Boil water add all ingredients simmer covered 30 minutes or until liquid is absorbed.

Cafe Rio Shredded Chicken
1 small bottle zesty Italian dressing
1TB chili powder
1 TB cumin
3 cloves minced garlic
5 lbs chicken breast
Mix all together in crock pot, cook 4-6 hrs. Shred chicken and cook 1 hr longer.

Cafe Rio Shredded Pork
6lbs pork
1 16oz jar salsa
1 can coke
2c brown sugar
Place roast in crock pot and fill halfway up the roast with water. Cook 5hrs, drain water. Cut into smaller pieces or shred if tender enough. Mix salsa, coke, and brown sugar and pour over roast. Cook 3 hrs longer, shred.

Microwave Carmel Corn


1 cube butter
1 cup brown sugar
1 bag marshmellows
2 bags microwave popcorn

Melt first three ingredients in sauce pan. Pour over popcorn. Super easy and yummy.

Ritz Chicken

2 lbs. Cooked boneless skinless chicken (@ 4 cups chicken)
2 cans 10 3/4 oz.Cream of Chicken Soup
1 cup Sour Cream
2 rolls of Ritz Crackers
4 T. butter

Cut chicken into bite size pieces or shred. Mix chicken, soup, 1 cup of water,and sour cream. Spread in a 9X13 inch pan. Crush Ritz and mix with melted butter. Spread of the top of the meat mixture. Cook until warm enough to serve. Bake at 400. Serve over rice.

Lemon Herbed Roasted Chicken

3-4# roasting chicken
1/2 tsp. salt
1/4 cup chopped onion
1 tsp. dried parsley flakes
2 T. butter
1/4 tsp leaf thyme
2T. lemon juice
1/4 tsp paprika

Rinse chicken well and pat dry. Place onion in cavity of the chicken and rub the skin with butter. Place chicken in Crock-Pot. Pour lemon juice over the chicken and sprinkle with remaining seasonings. Cover and cook on low 8-10 hours.

Blender Pancakes or Waffles

This is a whole wheat recipie. You use the whole wheat kernels.

1 c. wheat kernels
1 c. milk
Blend wheat & milk in blender one minute.

Add: 1/2 c. milk
1/2 c. oil
4 tsp. baking powder
2 eggs
1 tsp. salt
Blend four minutes

Ready for Pancakes or Waffles

Yougurt Parmesan Chicken

1c. crushed Ritz crackers or dries bread crumbs
2T. Parmesan Cheese
1tsp. seasoned salt
8 boneless, skinless chicken breast
1 tsp. garlic salt
2c. plain yogurt
1/4c. melted butter

Mix cracker or bread with cheese, garlic and seasoned salt. Dip chicken in yogurt then coat with crumb mixture. Place in 9X13 inch baking pan and drizzle butter over chicken. Cover with foil and bake at 350 for 30 minutes. Remove foil and bake for 30 more mins.

Chinese Chicken

1 c. Ketchup
1 c. sugar
2 oz. soy sauce
dash of garlic salt
1/3 c. vinegar
1 T. mustard
Pour over chicken and bake for 2hrs on 350.

Great served with fried rice, mashed or baked potatoes

Homemade White Rolls

4 cups hot water
1 1/2  cups sugar
1 T. salt
3 T. yeast
10-11 cups flour
1/2 c. oil

Add the ingredients in the order listed. Mix in Bosch for 5mins.
Then I put in my bread pans for 45-60 mins to rise. Bake @ 350 for 25-30 minutes until golden brown.   One secret I have is after I am done mixing it I turn my burner on for a quick minute and set my bread pans there to rise.

Marinated Chicken or Turkey


For 10 pounds of meat

32 oz of 7up
15 oz oil
2 T. lemon juice
10 oz of soy sauce
1 T. horse radish
(powdered or prepared)
sprinkle of Garlic


Mix all together and pour over meat. It should cover the meat. Soak big pieces for 10 hrs. or so. Soak strips for 3-4hrs. Drain, grill and enjoy.

Pretzel salad

1 lg Raspberry jello
1 1/2 cup water
2-10oz frozen raspberries thawed
Bring water to a boil mix in jello and raspberries refrigerate till partially set
... 2 cups pretzels crushed
3/4 cube melted butter
3Tb sugar
Mix together and press in 9x13 pan bake at 400 for 8 min. Then cool
1-8oz cool whip
1-8oz soft cream cheese
1cup sugar
Whip together then spread over cooled crust then spread jello over the top..enjoy!!

PEANUT BUTTER CHOCOLATE CHIP BARS

1 cake mix - yellow, white or chocolate
2 eggs
1/3 cup oil
1/2 cup peanut butter
1 cup chocolate chips

Mix together the cake mix (dry), eggs, and oil. Add in peanut butter. Mix in the chocolate chips.

Pat down into a 9X13 pan. Cook at 350 for 12-18 mins.

My family loves these cookies and they are so easy!

Cinnamon Rolls


1 yellow cake mix
5 cups Flour
2 T. yeast
2 eggs
2 1/2 c. warm water

  Dissolve yeast in warm water.  Mix cake mix, eggs and flour.  Let double in bulk (about 30 mins.)
Makes a very sticky batter. Roll out on into rectangle on floured surface. Brush with melted butter 1 cube. Sprinkle
with cinnamon and brown sugar. Roll up and cut 1/2 to 3/4 inch thick. Bake at 350 for 15-20 mins till golden brown.

Frosting

1/4 cup butter
2 cups powdered sugar
1/2 tsp vanilla
3-4 T. milk

Oriental Chicken Salad

1 head of cabbage 1/2 purple 1/2 regular shredded
1 bunch green onions chopped
1 bag silvered almonds
1 bottled chicken
2 chicken ramen noodles cruched up save spice packs for dressing

Dressing:
1 cup oil
4T. sugar
6T. vinegar
salt and pepper
ramen spice packs                                                                                                                          

Cream Cheese Frosting

1 6 oz soft crem cheese
1 soft cube real butter
whip until light add powered sugar about 3/4 of a 2# bag
whip add salt 3 shakes
1tsp Almond
1/2 tsp vanilla
whip together add milk if too thick and squeese 1/2 a lemon                                                                           

Apple Snicker Salad


  • 6 (2 1/4 ounce) Snickers candy bars, chill and chop
  • 6 apples, cored and chopped into bite sized pieces (Granny Smith and or or Red Delicious)
  • 1 (12 ounce) container Cool Whip
  • 1 (5 ounce) box instant vanilla pudding prepared
