Chicken Salad Sandwiches

3 1/2 cups diced cooked chicken

1 cup finely chopped celery
1 cup seedless grapes, halved 
 1 green onion
1/2 teaspoon salt
!/2 cup sour cream
1/2- 1 cup Miracle Whip

Directions:

1. Combine all ingredients; chill.
2. Serve with just about anything- crackers, chips, rolls, bread or bagel.

Cheerio Treats

• 1 c. sugar
• 1 c. corn syrup
• 1 c. creamy peanut butter
• 1 t. vanilla
• 5 c. Cheerios 
In a large sauce pan, combine sugar and corn syrup. Bring to boil over medium heat.

Allow mixture to boil for one minute and remove from heat.

Add peanut butter and vanilla to mixture and mix until smooth.

Add Cheerios and mix until all coated.

Drop mixture by spoonful onto waxed paper and allow to cool.

Makes approximately 2 dozen.

Pie Crust

4 cups flour
1 tsp. salt
1 2/3 cup shortening
cut like some the size of peas and meal
add
1/3 cup cold water
1 egg beaten
1 T. vinegar

for fruit pies add 2T. sugar
makes 2 pie crusts

Old Fashioned Pancakes

3 cups flour
7 tsp. baking powder
2 tsp. salt
2 T. sugar
2 1/2 cups milk
2 eggs
6 T. melted butter

Mix all ingredients well.  Pour scoop on heated griddle.  If too thick add alittle more milk.

Bean Dip

4 cups refired beans ( I use the dehydrated ones from the cannery)
4oz. sourcream
1-2 T. taco seasoning
mix well keep warm in small crockpot

Homemade Egg Noodles

1 cup flour
2 eggs
1/2 tsp. salt
1/4 tsp baking powder
water (1/2 eggshell full)

I usually add more flour.  I times this recipe by 5, but when I am making chicken and noodles I like to make a big pot.  Roll out pastry thin and cut into the size of noodles you want.  Drop into broth and simmer till tender.

Shrimp Ceviche

 
1 pound cooked cocktail shrimp
1 med onion diced
1 bunch cilantro chopped up
3 limes squeezed
4-5 tomatoes diced
1 T. salt
Mix all together in large bowl just like salsa. Enjoy with corn tortilla chips
* if you like alittle spice add 2tsp tapatio salsa or valentina

Chicken and Rice

8 chicken breast
2 cups uncooked rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 cube butter
2 cups water

Mix all together in ungreaed 9x13 pan.  Bake at 300 for 2hours. 

Lemon Lush

2 cups all-purpose flour 
2 (8 ounce) packages cream cheese 
1 cup white sugar 
2 (3.4 ounce) packages instant lemon pudding mix 
3 1/2 cups milk 
1 (12 ounce) container frozen whipped topping, thawed

  1. Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine the flour and butter using a pastry cutter until a ball forms. Press into the bottom of a 9x13 inch baking dish.
  2. Bake for 25 minutes in the preheated oven, or until lightly golden. Remove from oven and allow to cool completely.
  3. In a medium bowl, beat the cream cheese and sugar together until smooth and well blended. Spread evenly over the cooled crust. In another bowl, whisk together the lemon pudding mix and milk for 3 to 5 minutes. Spread over the cream cheese layer. Chill until set, then top with whipped topping.
Yummy with other flavors of pudding.

Pumpkin Cake

1 large can pumpkin
1 spice cake mix
6 eggs

Mix ingredients, blend well. Pour into 9X13 cake pan.  Bake at 350 for 20-30mins.  Let cool.  Frost with cream cheese frosting.

Raspberry Jello Salad

3 1/2 cups boiling water
1 lg. pkg. rasberry jello
1 sm pkg. inatant vanilla pudding
8oz cool whip
1 pkg frozen raspberries

Bring water to boil.  Add jello and pudding.  Stir till dissoved.  Cool until set solid.  Add cool whip and frozen berries, thawed and drained.  Stir well and serve.

Jello Popcorn

1 package marshmellows
1/4 cup butter
1 small box any flavor jello
12 cups popped popcorn

Melt marshmellows and butter together.  Add jello stir well.  Pour over popcorn.

Gooey Carmel Popcorn

1 bag marshmellows
1 cube butter
1 cup brown sugar

Cook butter and marshmellows till melted. Add brown sugar cook 1 minute
pour over 12 cups popped popcorn.
