White Chicken Chili

Ingredients These are the ingredients you’ll need to make.... Oil: oil heated in a pot or Dutch oven. Chicken: Boneless skinless chicken breast halves are perfect for this easy white chicken chili recipe. Onion and garlic: Cooking an onion and garlic with the chicken adds tons of flavor from the start. Broth: Use store-bought or homemade chicken broth. Beans: You’ll need three, drained and rinsed, cans of white beans and 1 black bean. Green chiles: Turn up the heat with two cans of chopped green chiles. Seasonings: Season the white chicken chili with dried oregano, ground cumin, cayenne pepper, fresh cilantro, and salt. Cheese: Top the white chicken chili with shredded cheese. Cook chicken, onion, and garlic in hot oil until chicken is browned on both sides. Cut the chicken into pieces, then return it to the pot or dutch oven. Add broth, beans, chiles, oregano, cumin, and cayenne pepper. Bring the mixture to a simmer and cook until the chicken is cooked through. Serve with cilanto and cheese on top.

Instapot Mashed Potaoes

Instructions
Fill Instant Pot pot with 1 inch of water in the bottom, maximum 1 1/2 cups water.

Peel and chop the russet potatoes.

Place potatoes in an Instant Pot.

Add the teaspoon of salt.

Put the lid on top of the Instant Pot, and turn to close the lid.

Set the valve to “sealing”.

Press the MANUAL button. Press the +/- button to set to 12 minutes.

Let the IP do it’s job. It will take a little while for the Instant Pot to come to pressure. At which time it will start counting down.

When it counts to zero, it should beep. At this time, turn the valve/ vent to Venting. Immediately turn the steam release handle back to the Sealing position at the first sign of spattering. Quick Release should ALWAYS be closely attended.

Once the pressure cooker has vented, open it, and add the milk and butter, as well as salt and pepper to taste.

Use a potato masher to mash the potatoes right in the pot.

Rice Pilaf

Ingredients

2 T. butter or margarine

1 small onion, chopped (1/4 cup)

1 cup uncooked regular long-grain rice

2 cups chicken broth

1/4 tsp. salt

1 In 3-quart saucepan, melt butter over medium heat. Cook onion in butter about 3 minutes, stirring occasionally, until tender.

2 Stir in rice. Cook 5 minutes, stirring frequently. Stir in broth and salt.

3 Heat to boiling, stirring once or twice; reduce heat to low. Cover and simmer 16 minutes (do not lift cover or stir); remove from heat. Let stand covered 5 minutes.

I sauted my onion and butter. Then I added it all to my rice cooker. Yummy

Crockpot Ritz Chicken

INGREDIENTS

10 3/4 ounce can cream of chicken soup
1 pint sour cream
1 1/2 cups crushed Ritz crackers
1/2 cup butter, melted
4 to 6 boneless skinless chicken breasts

INSTRUCTIONS

Combine the soup and sour cream in a bowl and set aside. In another bowl mix together crackers crumbs and melted butter.

Place chicken in a crockpot that has been sprayed lightly with non stick cooking spray. Spoon the soup/sour cream mixture over the chicken and then sprinkle with the Ritz cracker topping. Cover and cook on low for 7 to 8 hours, or cook on high for 4 to 5 hours.
Serve over rice.

Chocolate Zucchini Bread

Ingredients

3 eggs

1cup vegetable oil

2cups sugar

1tablespoon vanilla

2cups zucchini peeled, shredded

12cups flour

12cup baking cocoa

1teaspoon salt

1teaspoon baking soda

1teaspoon cinnamon

14teaspoon baking powder

Directions

  1. In a mixing bowl, beat eggs, oil, sugar and vanilla.
  2. Stir in zucchini.
  3. Combine dry ingredients; add to zucchini mixture and mix well.
  4. Bake at 350 for 50-60mins
  5. Bake at 350 for 50-60 mins
  6. Pour into two greased 8x4x3-inch loaf pans.
  7. Bake at 350°F for 1 hour or until bread tests done. Makes 2 loaves.

Rhubarb Crisp

6 cups rhubarb cubes

1 cups hot water

1 cups sugar

1 large raspberry jello


1 yellow or white cake mix


1 1/2  cubes butter

Add rhubarb to bottom of baking dish then layer jello,sugar and water. Spread dry mix over top.  Melt butter and pour on top. Bake at 350 for 1hr or until golden brown. Refrigerate to set up. Better if you make it the day before.

Homemade Oreo's

1 devils food cake mix
1 cube butter
2 eggs

Mix together, roll in ball , press with fork bake 350 for 8-10 mins
Let cool
Make homemade or store bought cream cheese frosting for the middle

Monster Cookies

1# butter softened
3# chunky peanut butter
12 eggs
2# brown sugar
4 cups sugar
4 tsp vanilla
8 T. Maple syrup
8 tsp baking soda
18 cups oatmeal
1 pkg semi sweet chocolate chips
1# plain m&m's

Mix butter and peanut butter. Add 12 eggs mix well. At this point at both sugars you will need to start mixing with hands. Add rest off ingredients in order and mix well.
Bake at 350 for 10 mins.
This recipe does not have flour. This recipes makes a big batch. Start with a large mixing bowl.

Chocolate Chip Cookies

Mix 1 cup shortening
3 eggs
1 cup butter
Add 1 1/2 cups sugar
1 1/2 cups brown sugar
2tsp. Vanilla
1 1/2 tsp salt
1 1/2 tsp soda
5 1/4 to 5 1/2 cups flour
Mix well add 2 1/4 c chocolate chips

Bake at 350 for 8-10 mins

S'More Krispy Treats

1/4 cup butter
1 (10 oz) bag regular marshmallows
1 box of Golden Graham cereal
1-2 cups Chocolate Chips

In a large sauce pan, melt butter over medium heat.  Add marshmallows and keep stirring until the marshmallows completely melt and you get a marshmallow sauce.  Remove from heat.

Add Golden Grahams and stir until they are all well coated.  You can chose to crush some up before adding them if you want some smaller pieces.  Next stir in chocolate chips.

Grease a 9×13 pan and press S’mores down.

1 large plain yougurt
1 16 oz cool whip
3 cans drained mandrain oranges
Or any other fruit you want
1 large vanilla pudding mixed

Make pudding once set, mix everything.
